ASPAGRO – Organic quinoa from Peru

Quinoa Cake

Serves 4 people.

  • 2/3 cups of quinoa
  • 400 grams of cheese
  • 1 large onion
  • 1 bell pepper
  • 2 eggs
  • 2 hard-boiled eggs (cooked)
  • 100 grams of green olives
  • 3 tablespoons of flour with baking powder
  • salt and pepper}
  1. Wash and cook the ASPAGRO quinoa in water, once ready, drain it
  2. FOR THE FILLING: Finely chop the onion and dice the pepper.
  3. Fry the onion and pepper in a saucepan.
  4. After 15 minutes add the seasonings, olives and 3 minutes later the diced cheese
  5. Turn off the heat and add the chopped hard-boiled eggs.
  6. Preheat the oven to high temperature while brushing the oven dish with oil.
  7. FOR THE PASTE: Mix the cooked ASPAGRO quinoa with the fresh eggs and the flour with salt and pepper. Add a teaspoon of bell pepper, stir until smooth.
  8. Use half of the paste to cover the bottom of the pan. Then place the filling, spread it well and then the final layer.
  9. Bake for 20 minutes at 180 °
  10. Serve and enjoy
