Do you wake up tired after resting? We have all suffered it at some time, but if it is constant, it can turn into chronic fatigue. That is why we share this recipe: Quinoa with chicken. Because of its high content of amino acids, it will restore your energies. Serves 4 portions.
• 4 chicken fillets
• 2 and a half cups of ASPAGRO quinoa
• 1 cup of chopped asparagus
• 2 carrots
• 2 cloves of garlic
• 1 medium onion
• 1 cup of peas
• 1 medium bell pepper
• 1/2 kg. spinach
• 1 tablespoon and a half of vegetable oil
1. Boil the quinoa while we blend the spinach with the carrot with a little water
2. Season the chicken with the salt, put the fillets in hot oil and brown them
3. For the dressing, brown the ground garlic, asparagus and diced onion.
4. Add the peas and the spinach and carrot smoothie to the dressing.
5. Add the chicken fillets plus two cups of water
6. When it has boiled, add the parboiled quinoa and the pepper cut into strips, cook for 10 min.
7. Serve and enjoy.
